Turkey Avocado Roll-Ups

Why This Is Strictly Keto

Sliced turkey replaces the tortilla, and mashed avocado stands in for the spread. Avocado provides the fat, red pepper and scallion add crunch, and the whole appetizer needs no cooking or grains.

Ingredients

  • 12 slices nitrate-free deli turkey breast
  • 2 ripe avocados
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons finely diced red bell pepper
  • 2 green onions, finely sliced
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1/4 teaspoon sea salt
  • Black pepper, to taste
  • Toothpicks

Instructions

  1. Make the filling: Mash the avocados with the lemon juice, salt and pepper until mostly smooth. Stir in the red pepper, half the green onions and the herbs.

  2. Layer the turkey: Overlap 3 turkey slices on a sheet of parchment to form a rectangle, and pat dry with a paper towel.

  3. Spread and roll: Spread a quarter of the avocado mixture over the turkey, leaving a small border, and roll up tightly from one long edge.

  4. Chill and slice: Wrap the log in parchment and chill 15 minutes. Slice into 1-inch pinwheels, secure each with a toothpick and top with the remaining green onions.

Tips

  • Lemon juice slows the avocado from browning, but these are best eaten within a day.
  • Round deli slices roll more neatly than folded ones; choose a brand without added sugars or fillers.
  • Try adding a strip of cheddar or cucumber in the center for extra crunch.
