Western Omelet with Ham, Peppers and Cheddar

Why This Is Strictly Keto
Eggs, ham, cheddar and butter contain almost no carbohydrate, and the small amount of green pepper and onion adds classic diner flavor for only a gram or two of carbs.
Ingredients
- 6 large eggs
- 2 tablespoons heavy cream
- 2 tablespoons butter
- ½ cup (80 g) diced ham, no added sugar
- ¼ cup (35 g) diced green bell pepper
- 2 tablespoons finely diced onion
- ½ cup (55 g) shredded cheddar
- Fine sea salt and freshly ground black pepper
- Chopped chives to serve
Instructions
Whisk the eggs: Whisk the eggs with the cream, a pinch of salt and pepper until fully blended.
Cook the filling: Melt 1 tablespoon of the butter in a nonstick skillet over medium heat. Cook the ham, pepper and onion for 3–4 minutes until softened. Scoop onto a plate.
Cook the omelet: Melt the remaining butter in the skillet. Pour in the eggs and cook, lifting the edges, until nearly set, about 3 minutes.
Fill and fold: Scatter the filling and cheddar over one half, cover for 1 minute to melt the cheese, then fold the omelet over.
Serve: Slide onto a plate, cut in half and garnish with chives.
